Orchards Cookery specialises in training and recruiting chalet cooks to work in ski resorts. Courses also on offer include "Off to University" and Designer Dinners for Beginners"
Chalet courses (5 days or 2 weeks, residential)
There is an art to being a great chalet cook. We will show you how to master it, enabling you to get the most out of your job and life in the mountains. With seven seasons of experience in the chalet industry and working alongside ski companies, we have designed a course to train the perfect chalet host.
Designed specifically for ski season chalet cooks, the course will boost your confidence, develop your culinary skills and knowledge of cooking, giving you the ability and inspiration to create your own masterpieces in the kitchen.
You will be given a two-week meal plan, including vegetarian options, with detailed recipes and time plans. Also advice on catering for special diets and food allergies (coeliac, diabetes etc). We will show you short cuts and pass on valuable tips of the trade, teaching you how to handle disasters and equip you for coping with the unexpected problems you may come across while cooking at altitude (exploding cakes being the most memorable one!)
Our cookery course is intensive, enabling you to get the most out of your time at The Orchards. In the evening we have a dinner party, each course cooked by two students giving everyone the opportunity to practise as a chalet host (don’t panic, lots of personal tuition and encouragement makes the whole experience surprisingly easy and enjoyable).
We supply you with a detailed Chalet Cook’s file containing all the information you could possibly want to know about working in a chalet. We don’t believe in note taking, it’s boring and you might miss something! We also provide you with a Chalet Cook's goodie bag to take with you, containing all sorts of essential time saving pieces of equipment.
We will also educate you on wines, basic food hygiene and health and safety to add more strings to your bow.
We recommend the two week course to Gap Year students.
We will give you the opportunity to start the season with the perfect routine. If you don’t have time to ski to your heart's content and make the most of the aprés ski, what is the point of putting up with the cold!
Off to University (5 days, residential)
Healthy, delicious and affordable meals for students, including easy entertaining. Ideal for school leavers who are moving away from home and cooking for themselves for the first time.
Designer Dinners course (5 days, residential)
Terrified at the thought of having a dinner party? Feel you cannot cook well enough to entertain your friends at home? Dream of being able to whip up delicious and impressive dinner parties or perhaps just a tasty supper after a long day at work? The Designer Dinners course may be just what you are looking for.
The Designer Dinners course will boost your confidence, develop your culinary skills and knowledge of cooking, giving you the ability and inspiration to create masterpieces in your own kitchen for friends and family.
